Do you taste the blue of the sea? Can you hear the white chewing of its stones in the deepest of its ends? How would you feel if its richest colours ceased to exist? This is a short walk down culinary ecology as we ponder some of the basic efforts that could be undertaken to preserve both tradition and resources across cultures. We travel to Lebanon’s largest two cities to peel away at the stories behind their shrouded houses that date back to the 19th century. Who lives there, how do they live, and why are these structures so important?
